Bakery-Style Blueberry Muffins
Ingredients
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 eggs room temperature
- 1 cup buttermilk room temperature
- 1 tbsp vanilla bean paste or vanilla extract
- 1/4 cup (65g) sour cream, room temperature
- 2 tbsp neutral oil
- 2 1/2 cups (315g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- pinch Kosher salt
- 1 1/2 cups blueberries fresh preferred
Crumb Topping
- 3/4 cup (60g) all-purpose flour
- 2 tbsp cornstarch
- 1/4 cup (52g) light brown sugar
- 1/4 cup (50g) granulated sugar
- 6 tbsp (90g) unsalted butter, melted
- pinch Kosher salt
Instructions
- Line or grease a muffin tin and set aside. I make these in a 6-muffin large tin.
Wet Ingredients
- In a large mixing bowl, whisk together the melted butter and sugar until fully combined.
- Add the eggs and whisk vigorously for about 2 minutes, until the mixture is pale yellow and slightly thickened.
- Whisk in the buttermilk, vanilla, sour cream, and oil until smooth and well combined.
Dry Ingredients
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Reserve 2 tablespoons of the dry mixture to toss with the blueberries later.
Combine Wet & Dry
- Pour the wet mixture into the dry ingredients and gently mix until just combined.
- Toss the blueberries in the reserved 2 tablespoons of dry mixture.
- Add the blueberries to the batter. Do not over mix the batter.
Rest, Preheat & Make Crumb
- Let the batter rest at room temperature for 30 minutes. Do not stir again.
- While the batter rests, preheat the oven to 425°F (220°C).
- To make the crumb topping: In a bowl, mix the melted butter with both sugars until a thick paste forms. Add the flour, cornstarch, and pinch of salt, and mix until coarse and crumbly.
Assemble & Bake
- Divide the batter evenly among the muffin cups, filling them generously. Sprinkle the crumb topping liberally over each muffin.
- Bake at 425°F for 5 minutes, then (without opening the oven door) reduce the temperature to 375°F (190°C). Continue baking for 15 minutes, or until a toothpick inserted in the center comes out clean.
Baking Notes
- If the muffins begin browning too quickly around the 10–15 minute mark, carefully and loosely tent with foil.
- If they need more time after the initial 20 minutes, bake an additional 3–5 minutes.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
