Living in Colorado’s high desert has its perks: sunshine for days, bluebird skies, and zero humidity. But that same dry air? It’s a brown sugar killer. There’s nothing quite like reaching for your pantry stash mid-cookie-cooking-craving only to find… a brick.
So, I made my own (lovingly calling it Rocky Mountain Brown Sugar). If you’ve ever lived in an arid climate, you understand! Luckily, the fix couldn’t be easier.
Just sugar + molasses. That’s it. Two tablespoons of molasses will give you a perfect medium brown sugar. Want it darker and richer? Add another spoon or two.
At first, I wasn’t sure how to get the molasses evenly distributed — fork? whisk? sheer determination? This was a job for my KitchenAid. A few minutes of mixing, and the clumps transform into soft, fluffy, caramel-hued perfection.
