The Story
It was one of those perfect Colorado Saturdays: blue skies, no wind, the kind of day made for a motorcycle ride. My Chihuahua, Chica, was ready too; her little carrier strapped to the bike, ears perked for adventure.
Just as I was about to pull out, I heard the shriek of three neighborhood girls:
“WAIT! We want to see your motorcycle!”
Living way out east of Colorado Springs, life on a military base is pretty quiet. Tumbleweeds for company, kids riding bikes, neighbors waving as they come and go. These girls are sweet as pie, and absolutely enthralled with the bike (and my Chihuahua).
One of them, 12 years old and brimming with confidence, announced, “My mom says when I’m 13, I can have a boyfriend!”
I laughed. “Wait until you’re 30.”
She blinked, considering it. “Do you have a boyfriend?”
“Nope.”
“We’re going to find you one!”
“Okay. Just make sure he likes Chihuahuas.”
I pulled away on the bike, helmet on, Chica in tow, three girls running behind me, laughing and cheering us down the street. Totally sweet. Totally nutty. And my inspiration for these sweet, nutty Brown Sugar Cashew Cookies.

How to Make Brown Sugar Cashew Cookies
Brown Sugar Cashew Cookies
Ingredients
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1/2 cup cashews, finely ground
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/3 cup sour cream
- 1½ cup cashew halves
Instructions
- Heat oven to 350 F degrees
- Spread cashews on a cookie sheet and lightly brown (about 10-15 minutes)
- In a mixer, combine the brown sugar and butter until creamy
- Add the egg and vanilla and continue to blend in the mixer
- Add the flour, ground cashews, baking powder, baking soda and sour cream and mix on slow speed. When the flour is incorporated, then you can turn the speed up and mix until creamy again
- Stir the cashew halves in by hand
- On an ungreased cookie sheet, drop a heaping tablespoon of dough and space the dough drops a couple inches apart
- Cook for 10-12 minutes
- Cool completely
